Earth Friendly Meals

We celebrated Earth Day in our E-meal class this week. You can too, with a cup of chopped onions, a clove of crushed garlic, 8 ounces of chopped mushrooms, a half cup of chopped walnuts, a cup of cooked lentils, 28 ounces of crushed tomatoes, a handful of chopped greens and a few spices.

No oil was used to sauté those first four ingredients in a hot dry skillet. We used a little water as needed to keep things from burning, and then added the remaining ingredients with a squirt of Sriracha, a tablespoon of red wine vinegar, a tablespoon of Braggs aminos, and a few shakes of Italian herbs and spices. Everyone gave a thumbs up after tasting this thick tasty sauce on a bed of cooked whole grain angel hair pasta!

So what makes this an EARTH FRIENDLY meal? Is it the mushrooms? Is it the lentils? Is it the tomatoes? A hardy YES to all three! This is truly a plant-based meal made entirely from plants, no animal products. We call it an E-MEAL because it is EASY, ECONOMICAL, ETHICAL, EXCELLENT TASTING & EXCELLENT NUTRITIONALLY. And EARTH FRIENDLY because plant-based foods have only a fraction of the environmental impact of animal-based foods.

This Earth Day, and every day, we hope everyone will join us in making the dietary shift away from animal foods to eating more environmentally friendly, plant-based foods.
