GO VEG WITH THE WHITE HOUSE

On June 22, an elegant plant-based dinner was served at 1600 Pennsylvania Ave. in honor of India’s Prime Minister, Narendra Modi. Chef Nina Curtis curated the sustainable menu for the 400 guests attending this grand state dinner.

High praise goes to Dr.Jill Biden for orchestrating the significant meat-free event. Hopefully this is the beginning of meaningful menu changes in the White House as well as in households across America. Experts around the globe are urging the shift away from animal-based to plant-based diets due to the catastrophic impact of animal agriculture on climate, the environment and health.

To start making the shift at home, check out Chef Curtis’ menu pictured above. Plan a meal around portobello mushrooms. Grill or broil them with fresh zucchini, peppers and onions; eat them on a bun or stuff them with your favorite grain. Serve them with a salad or steamed vegetables. Now celebrate your meat-free meal with a bowl full of fresh peaches and blueberries!
